Commonly known as crystal dumplings or crystal dumplings
Crystal dumplings are crystal clear in appearance and the filling is indistinct. The stuffing is the same as ordinary dumplings, but the dumpling skin is not the same.
1、 Dumplings made of dumplings
In addition to the extensibility of the dough, the skin of crystal dumplings is required to have good transparency after cooking, and the cost is acceptable.
Main ingredients: 1 part of potato starch, 2 parts of wheat starch
2. Operation steps
(1) Put 1 part of potato starch and 2 parts of wheat starch into the pot and mix evenly;
(2) Pour in boiling water, stir while pouring, then mix the dough evenly, the ratio of water to flour is 3:2.5-2.8, and then use the common method to make crystal dumpling skin.
2、 Filling preparation
The filling of crystal dumplings can be sweet or salty, and the color matching is reasonable and bright, and the taste is good. It is suitable to choose red, yellow, green and other raw materials as the main filling. According to this principle, it can be adjusted at will.
1. Beef dumplings (light red)
(1) Main stuffing: 375g beef stuffing, 75g fat meat, 8 onions and 1 teaspoon ginger.
(2) Seasoning: 2 tsp cooking wine, 2 tsp soy sauce, proper salt, proper black pepper, half a cup of green onion and ginger water, 4 tsp sesame oil.
(3) Preparation: mince beef stuffing and fat meat stuffing together, mix in all seasonings and mix well, then add chopped scallion and ginger powder, mix well in the same direction to form stuffing.
2. Dumplings with egg and spinach
(1) Main ingredients: 6 eggs, 300g spinach, 150g meat stuffing.
(2) Seasonings: 1.5 tsp salt, 1 tbsp wet starch (the egg is soft when added into egg liquid); 2.1 tsp salt, proper amount of pepper and 4 tsp sesame oil.
(3) Preparation: ① add seasoning to egg liquid, stir fry salted egg flower, wash spinach, scald with boiling water with a little salt, take out and rinse, squeeze out water, chop, mix with egg flower and meat stuffing, add seasoning; ② mix well in the same direction to form stuffing.
After wrapping the stuffing with crystal dumpling skin, it can be made into crystal dumpling by conventional method
Other boiled dumplings:
Tip 1: add 6 egg white into 1 jin flour to increase the protein in the flour. The protein in the dumpling will solidify and contract quickly after being put into the pot. The dumpling will collect water quickly after cooking and is not easy to adhere
Tip 2: make the dough a little harder. Put it in a bowl and seal it tightly for 10-15 minutes. When the gluten in the flour absorbs water and expands, make dumplings
Tip 3: when cooking dumplings, add enough water, add 2% salt after boiling water, and then add dumplings after dissolving, which can increase the toughness of gluten. Dumplings will not stick to the skin and bottom, and the color of dumplings will turn white, and the soup will be clear and fragrant.
Tip 4: after the dumplings are cooked, first use the hedge to pull out the dumplings, and then put them into the warm boiled water for a while, and then put them on the plate. The dumplings will not stick to each other.
Tip 5: when cooking dumplings, most of the water-soluble nutrients in the skin and stuffing of dumplings are dissolved in the soup except for a small part loss due to heat. Therefore, it is better to eat dumplings and drink the soup.
