怎样才能让饺子皮既筋道又透明?

俗称水晶饺子或水晶包子.

水晶饺子外观晶莹剔透,馅料隐约可见。其馅料与普通饺子相同,只是饺子皮不太一样。

一、饺子皮的制作
1、 Dumplings made of dumplings
水晶饺子的皮除要求面团具有一定的延展性外,更要求饺子皮蒸煮后具有良好的透明度,同时要求其成本能被人接受。

1、配方

主料:土豆淀粉1份、小麦淀粉2份

二、馅料的配制
2、 Filling preparation
水晶饺子馅可甜可咸,配制时要求色彩搭配合理、鲜艳,且口感良好。适合选择颜色较深的红、黄、绿等原料做主馅料。按此原则可随意调配。
The filling of crystal dumplings can be sweet or salty, and the color matching is reasonable and bright, and the taste is good. It is suitable to choose red, yellow, green and other raw materials as the main filling. According to this principle, it can be adjusted at will.
1、牛肉水饺(颜色淡红)
1. Beef dumplings (light red)
(1)主馅料:牛肉馅375克,肥肉75克,葱8根,姜末1茶匙。
(1) Main stuffing: 375g beef stuffing, 75g fat meat, 8 onions and 1 teaspoon ginger.
(2)调味料:料酒2匙、酱油2匙、盐适量、黑胡椒适量、葱姜水半杯、麻油4匙。
(2) Seasoning: 2 tsp cooking wine, 2 tsp soy sauce, proper salt, proper black pepper, half a cup of green onion and ginger water, 4 tsp sesame oil.
(3)调制:牛肉馅和肥肉馅一同剁细,拌入所有调味料调匀,再加入切碎的葱花和姜末,顺同一方向拌匀即成馅料。

2、鸡蛋菠菜水饺(颜色青黄)
2. Dumplings with egg and spinach
(1)主料:鸡蛋6个、菠菜300克、肉馅150克。

(2)调料:①盐半匙、湿淀粉1大匙(此料加入蛋液中炒出的蛋较松软);②盐1匙,胡椒粉适量,麻油4匙。
(2) Seasonings: 1.5 tsp salt, 1 tbsp wet starch (the egg is soft when added into egg liquid); 2.1 tsp salt, proper amount of pepper and 4 tsp sesame oil.
(3)调制:①蛋液中加入调料打匀炒咸蛋花,菠菜洗净,用加有少许盐的开水烫软,捞出冲凉后挤干水分,切碎后与蛋花和肉馅混合,加入调料;②顺同一方向拌匀即成馅料。

用水晶饺子皮包好馅料后,按常规方法煮即可制成水晶饺子

窍门1:在1斤面粉里掺入6个蛋清,使面里蛋白质增加,包的饺子下锅后蛋白质会很快凝固收缩,饺子起锅后收水快,不易粘连

窍门2:面要和的略硬一点,和好后放在盆里盖严密封,饧10-15分钟,等面中麦胶蛋白吸水膨胀,充分形成面筋后再包饺子

窍门3:煮饺子时要添足水,待水开后加入2%的食盐,溶解后再下饺子,能增加面筋的韧性,饺子不会粘皮、粘底,饺子的色泽会变白,汤清饺香。
Tip 3: when cooking dumplings, add enough water, add 2% salt after boiling water, and then add dumplings after dissolving, which can increase the toughness of gluten. 窍门4:饺子煮熟以后,先用笊篱把饺子捞出,随即放入温开水中浸涮一下,然后再装盘,饺子就不会互相粘在一起了。

窍门5:煮饺子时,饺子皮和馅中的水溶性营养素除因受热小部分损失之外,大部分都溶解在汤里,所以,吃水饺把汤喝掉比较好。
